Salmon Pinwheels

1 Cup Cream Cheese, softened
1 Oz. Fresh Chives, chopped fine

Mix well

1 Lb. “Hot Smoked” Salmon, chilled and flaked apart
½ Cup Red Pepper, diced
½ Cup Green Pepper, diced
¼ Cup Red Onion, diced
Salt and Pepper to taste

Combine, mix well, but gently

Spinach (or Tomato Basil) Tortilla
Field greens

Lay tortilla flat and spread evenly, edge to edge, with a thin layer of cream cheese mixture. Add 1 cup of salmon mixture, spread evenly edge to edge and then top with a layer of spring mix.  Tuck in tortilla edge and tightly roll up.

Wrap the roll tightly in cling film and chill for 1 hour. Remove wrap, slice into 1-inch sections and serve.
